The S-Series was produced at the Samick factory in Korea starting in 1986 with the S-200 though S-900 and was ultimately discontinued in 2004. In 1999, the S-Series guitars were redesigned with the addition of an open-coil humbucker in the bridge position. The S-210 became the FAT-210 and the S-310 became the FAT-310. The FAT-210 was available in Player Packs until it was discontinued in 2004. From 1999 until 2004, the FAT-210 & FAT-310 were the only remaining S-Series guitars.

Early S-Series guitars had "Epiphone By Gibson" inlaid on a Jackson-style. pointed headstock. These headstocks were later slightly rehaped at the edges and eventually changed to resemble an elongated Explorer-style "hockey stick" headstock. The "Epiphone By Gibson" inlay was dropped in 1989 and replaced with an "Epiphone" inlay. The headstock was changed yet again to the current Explorer-style and remained that way until 1996, when it was changed to the "Batwing" design.

The S-300 was reconfigured in 1989 and became part of a starter pack. The same year, the S-310 was introduced and became the S-Series' single coil guitar in non-starter pack form. The S-300 was discontinued in 1992.
